{"id":409,"date":"2013-02-03T14:03:33","date_gmt":"2013-02-03T20:03:33","guid":{"rendered":"http:\/\/recipeforflavor.com\/?p=409"},"modified":"2013-02-03T14:20:09","modified_gmt":"2013-02-03T20:20:09","slug":"chicken-salad","status":"publish","type":"post","link":"https:\/\/recipeforflavor.com\/?p=409","title":{"rendered":"Chicken Salad"},"content":{"rendered":"<div class=\"easyrecipe\">\t<link itemprop=\"image\" href=\"http:\/\/recipeforflavor.com\/wp-content\/uploads\/2013\/02\/20130203-140239-768x1024.jpg\" \/> <span class=\"item ERName\">Chicken Salad<\/span><\/p>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">3 pounds skinned and boned chicken breasts<\/li>\n<li class=\"ingredient\">1 (49-1\/2-ounce) can chicken broth (Or use 2 rotisserie chickens to replace both of above ingredients)<\/li>\n<li class=\"ingredient\">1 cup finely chopped celery<\/li>\n<li class=\"ingredient\">1\/2 cup finely chopped water chestnuts, rinsed and drained<\/li>\n<li class=\"ingredient\">1\/2 cup finely chopped red bell pepper<\/li>\n<li class=\"ingredient\">1\/2 cup finely chopped yellow bell pepper<\/li>\n<li class=\"ingredient\">1\/2 cup finely chopped red onion<\/li>\n<li class=\"ingredient\">3 cups mayonnaise<\/li>\n<li class=\"ingredient\">1 teaspoon ground red pepper<\/li>\n<li class=\"ingredient\">1\/2 teaspoon salt<\/li>\n<li class=\"ingredient\">1\/2 teaspoon white pepper<\/li>\n<li class=\"ingredient\">1\/2 cup raisins<\/li>\n<li class=\"ingredient\">1\/2 cup grapes, cut into 4ths<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Place chicken breasts in a large skillet; add chicken broth. Cover and bring to a boil over high heat. Reduce heat to medium low, and simmer, covered, 30 minutes or until chicken is done.<\/li>\n<li class=\"instruction\">Remove chicken from skillet, and let stand 15 minutes or until cool to touch. Shred chicken (I use a fork to shred it which is time-consuming but gives it a wonderful texture).<\/li>\n<li class=\"instruction\">(Or use rotisserie chicken!)<\/li>\n<li class=\"instruction\">Combine shredded chicken, celery, water chestnuts, bell peppers, onion, grapes, and raisins.<\/li>\n<li class=\"instruction\">Stir together mayonnaise, ground red pepper, salt, and white pepper until well blended.<\/li>\n<li class=\"instruction\">Spoon over shredded chicken mixture, stirring to coat.
